A family kitchen, twenty steps from the water
Maré started as three tables under a palm-thatch roof, run by the Fernandes family on a stretch of Candolim they'd fished for two generations. The name means "tide" — because the menu still depends on it: what the boats bring in by mid-morning is what's on your plate by evening.
Two decades on, the roof is sturdier and the tables have multiplied, but the kitchen still runs on the same rule: nothing frozen, nothing rushed, and every curry made the way it's always been made in a Goan home — just enough for the day, then started again tomorrow.
